GRAF HARDEGG BRUT ROSÉ 2013
This elegant Rosé vintage sparkling made from Pinot Noir and Zweigelt grapes is produced with the traditional bottle fermentation and manual riddling after resting more than three years on the lees. The result is a well-structured and distinctive representative of the “cool climate” style with a fine mousseux.
The vineyard: Steinbügel, our best vineyard right next to the winery, is located on a south-facing slope with permeable clayey primary sand soil with a high amount of lime. Being exposed to the sun, arid heat develops during the day, while chilly continental air brings freshness at night which results in great differences between the day and night temperatures. This, in turn, leads to the fresh, crisp acidity and a distinctive variety of aromas in the grapes.

The grapes for the sparkling wine were the first to be picked in mid-September from various allotments of our Steinbügel vineyard. The main issue was to hit acidity and maturity at their perfect balance. Fermentation was done with indigenous yeast from the vineyard (spontaneous fermentation) in oak barrels. The wine was then bottled the following spring for the secondary fermentation while it rested on its yeast for more than three years. This was followed by manual riddling in the own cellar and degorging.

Great apéritif to classic food like caviar, oyster and seafood. It is also an interesting and inspiring complement for sushi and a delight on its own for any occasion.
